Piri piri sauce recipe
The first thing you want to do is make the piri piri sauce, enough to marinade the chicken and to use as dipping sauce later on.
Start by roasting bell peppers and red onions with oil, paprika, cayenne, and salt. Add some garlic and red chillies and roast for another 5-10 minutes until the peppers are soft and smokey. Then transfer them to a blender with dried bird’s eye chilies, white pepper, and lemon juice and blend until it forms a smooth paste-like consistency. Add a little oil, blend some more, and set aside.

Now for the chicken! You can either use a full chicken and break it down yourself or use chicken breasts for a quick weekend lunch or dinner. Place the chicken breasts on a baking tray and smother with homemade piri piri sauce. Bake for 20-30 minutes in the oven at 375°F until mostly cooked.
Keep basting (if you’re prepping a full chicken) and smothering sauce while baking for another 10 minutes until fully cooked and moist in the center. Serve with remaining piri piri sauce.
